Ingredients

| 2 | garlic cloves |
| 3 | carrots |
| 2 | potatoes |
| 1 leek | stalk |
| 1 | celery root (small) |
| 1 | zucchini (small) |
| 1 liter | vegetable broth |
| 250 ml | oat or almond milk |
| 80 g | cashews |
| 2 tbsp | olive oil |
| salt | |
| pepper | |
| nutmeg | |
| lemon juice |
Zubereitung
Peel and roughly chop the onion and garlic. Peel/clean the carrots, potatoes, zucchini, and celery and cut into pieces. Wash the leek thoroughly and slice into thin rings.
Heat olive oil in a large pot. Sauté onion and garlic until soft and fragrant. Add the prepared vegetables and lightly roast to release their aroma.
Deglaze with vegetable broth and add the cashews. Cook over medium heat until vegetables are tender, about 20 minutes.
Add the plant-based milk and puree everything with an immersion blender or in a regular blender until creamy. Add more plant-based milk if needed to achieve the desired consistency.
Season with salt, pepper, and nutmeg. Optionally, add a splash of lemon juice to enhance freshness.
Serve hot and garnish as desired.
